SS304 or SS316? Choosing Stainless Grade for UAE Commercial Kitchens

The wrong stainless grade will not fail inspection on day one — it fails eighteen months later, quietly, as pitting under the salt.

Almost every commercial kitchen enquiry we receive specifies “stainless steel” and stops there. In the Gulf that is not enough information to fabricate from, because the difference between 304 and 316 decides whether your equipment lasts fifteen years or starts pitting in its second summer.

What actually separates the two grades

Both are austenitic stainless steels with similar strength, weldability and appearance. The difference is molybdenum: 316 contains roughly 2–3%, and 304 contains none. Molybdenum is what resists chloride attack — and chloride is the defining feature of the coastal UAE environment.

  • SS304 — excellent general corrosion resistance, lower cost, the correct default for most indoor kitchen equipment.
  • SS316 — adds molybdenum for chloride and acid resistance. Necessary near the coast, in wet areas and where aggressive cleaning chemicals are used.
  • SS304L / 316L — low-carbon variants that resist weld decay on heavier sections.

Where we specify 316 without being asked

There are situations where we will quote 316 even if the client asked for 304, and explain why on the quotation:

  • Any equipment within a few hundred metres of the Corniche or open sea.
  • Dishwash and pot-wash areas, where chlorinated detergent is used daily at temperature.
  • External or semi-external installations — service yards, loading bays, rooftop plant.
  • Fish and seafood preparation, where brine contact is continuous.
  • Anywhere a chlorine-based sanitiser is part of the daily cleaning routine.

The mistake that costs more than the grade

In practice we see more stainless failures caused by fabrication technique than by grade selection. Carbon contamination is the usual culprit: grinding a stainless surface with a disc that has previously touched mild steel embeds carbon particles that rust within weeks. It looks exactly like the stainless itself has failed.

Dedicated stainless-only tooling, correct weld purging and post-fabrication passivation matter more than the last 1% of alloy content.

A practical rule

Specify 304 for indoor dry-side equipment — worktables, shelving, dry storage, service counters. Specify 316 for wet-side, coastal, external and chemical-contact applications. When the budget only stretches to one upgrade, put it in the wash-up area.
